Lemon Balm Pesto I didn't really measure but this is roughly what I used. It is great over pasta or on chicken.
4 cups fresh lemon balm leaves, packed 1cup fresh parsley leaves, packed 12 garlic cloves or more if you like.. 1/2 cup raw cashews 1 cup olive oil 1/2 cup freshly grated Parmesan-Reggiano Juice of 2 lemons (seeded) fine sea salt and freshly ground black pepper to taste
