1 large carrot, 1 large potato, 1 large sweet potato 1 large beet, 2 Tbs. olive oil, 1 teaspoon chopped fresh thyme, 1/2 teaspoon chopped fresh rosemary, salt and pepper to taste. Preheat oven to 400 degrees F, Cut the veges into 1/2 inch wide spears, keeping the peels on, and place on roasting pan. Coat with olive oil, herbs, salt and pepper. Roast for approx. 40 Minutes, turning the vegetables regularly until all sides are golden brown and cooked through. This is from Grow Great Grub...
